Salmon and Mash Leftovers Rissoles

With some leftover mashed potato, salmon and veggies in the fridge from last night, I knew I could make a fabulous lunch out of these items and not waste a thing. There's almost always some frozen, cooked rice in a snap lock bag in my freezer so, this lunch was whipped up with the help of my food processor and my fry pan.
Place all the ingredients into the food processor, add an egg and some salt & pepper and a little flour to bind it all together. Form into small, flat balls and shallow fry in some coconut oil until browned all over. Serve with some rice and douse with some kecap manis. Never miss the opportunity to add a little salad on the side.
