Avocado, Apple and Rice Salad with Coleslaw

A nice little rice salad is a must in everyone's repertoire, I think. Whenever you've got some leftover rice in the fridge you've got the base for a lot of possibilities.
A stir fry. A meat ball. A salad.
Quick and easy, you can just about add anything in your vegetable bin into this one. Here, I added the following:
Gather
Rice | Cooked and cooled from the night before
Salt & Pepper | to taste
Lemon Juice | 1 tablespoon
Carrot | 1/2 a carrot, finely sliced
Celery | 1 stick, finely sliced
Apple | 1/2, finely sliced
Avocado | 1/2, diced

To Do
Use a mandolin to finely slice the carrot, celery and apple. It's a great tool that makes salad ingredients sing. Gently mix this into the rice, lemon juice and salt & pepper.
Serve with rocket, grilled peppers and corn relish and any cold meat you have on hand.
