Is anyone finding it hard to substitute dairy and wheat products in your usual recipes? You really have to think about it while shopping and keep your eye peeled for the substitute products. It is possible, though. There are some amazing products out there to suit all diets, these days. Serving little pies to guests is always a winner. Except when you have a mix of gluten free and vegetarian guests. Tricky. But, by using the prosciutto as “pastry” and making fillings with leftovers sweet potato and cream cheese and egg whites, you can produce a nice little mix that should suit everyone.

These flew off the plate once they came out of the oven. Photographing was a hurried affair as hands kept reaching for them. Note to self: don’t cook for photoshoots around meal times. You could try using the gluten free pastry and non-dairy cream cheese to really achieve full vegan status. Tofutti make some fabulous dairy free cream cheese and ricotta.
