Bok Choy (Regrown in my Garden)

The joy of growing food has been a pleasure of mine since I was a young kid. But living in a busy city like Sydney, has meant I’ve had to adapt my gardening to balconies and pots. Discovering the ease with which you can re-grown vegetables from the roots has been a boon. I save the crowns of lettuce, bok choy and shallots, sit them in little glasses of water until they start to regrow and wait for the roots to appear. Then they’re planted in pots on my balcony and I eagerly await their re-growth.
Today, I harvested some bok choy and quickly microwaived it with some Asian sauces and Managed to photograph it before I devoured it.

Total time: 10 minutes
The Stuff
Bok Choy | 2 small bunches (or whatever you can harvest from your garden)
Soy Sauce | 1 tablespoon
Fish Sauce | 1 tablespoon
Sweet chillie Sauce | ¼ cup
Pine Nuts | 1/4 cup, toasted
Cinnamon | ¼ teaspoon
Kecap manis | 1 Tablespoon
Lemon Juice | ¼ tablespoon
Kimchi | ¼ cup
The Fun
Place the bok Choy in a microwave dish with the soy, sweet chillie and fish sauces and a splash of water in the microwave with the lid on. Cook on high for 1 minute. Place the cooked bok choy on a plate and sprinkle with pine nuts, kecap manis and lemon juice and serve with some kimchi.
