Meatless and "Wheatless" Monday

I’ve been attempting to do every Monday as a meatless Monday but sometimes forget and find myself devouring some animal protein or other. But, I am doing more and more often with surprising results. Today, breakfast was a home made bircher muesli with Agave syrup and yoghurt (homemade from Hansell’s yoghurt mix) and cacao chips. And a black coffee with coconut sugar. Great way to start the day.

A nice baby rose and green tea with a teaspoon of honey followed shortly after before I left the house to attend to some appointments. By 12 o’clock, that nagging “I better eat soon” feeling came over me but I had to suppress it as I was still out doing my business. Always take a bottle of water with you to satisfy those hunger cravings and stop me being “hangry”.

Once home, I made some spicy braised tofu with Rice for lunch. And realized, this could be a wheatless as well as a meatless Monday. Could I do it? Mmmmmmm, yes, of course! I’d added some mung beans soup to the tofu and some sprouted mung beans. Yummy! But, the gas was building up. Guess it was all that fabulous fibre working it’s way through my system.

More baby roses and white tea followed. And more visits to the toilet. I was feeling good, actually. Not craving sugar and not hungry. But, then it occurred to me, what will I make for dinner?

Get out the mandolin, finely slice some potatoes, sweet potatoes, zucchini, onion, and halloumi cheese. Lightly fry all these items until golden and stack on a plate. Drizzle with coriander pesto, cracked pepper and lemon juice. And hubby can have some leftover pork from last night to go with his veggies. I really enjoyed my meatless and wheatless Monday, though, I had to be really mindful of what I was eating. My usual go to snacks of a cracker with cheese was modified to just the cheese. Luckily, I had some dahl in the fridge and heated that up for a mid afternoon snack. A lot of planning is required to gluten free because it seems like most things have some form of wheat in them. There’s even some debate about oats being gluten free as it does have the same affect as gluten on some coeliacs.

The big plus was an apparent drop in weight at my morning weigh in. And through the day, I noticed a feeling of less water retention as my rings were very lose on my fingers. Anyway, this is just my personal findings on the affects of cutting out whole food groups for just one day. Stay tuned for the next experiment! Lol.
