Meatballs and Gravy

These meatballs are the classic frugal ingredient meal that anyone can make. I always buy the best mince I can afford because there's nothing worse than fatty, soapy old mince. You might as well buy the mass manufactured ones.

The small amount of mince is bulked out with celery, onion, carrot and garlic. Add some stale bread crumbs and some chia seeds for good luck and you've got the best dinner ready for any gravy, mash and peas.

Yield: 12 meatballs

Total Time: 60 minutes

Ingredients

Meat Balls Organic Beef Mince | 380 grams Celery| 1 stick Onion | 1 small Garlic| 1 clove Carrot| ½ small Egg| 1 medium Salt & Pepper| to taste, about 1 teaspoon Sourdough Bread | 2 slices, at least a day old, 1 cup of crumbs Parsley| ¼ cup, minced Chia Seeds| ¼ cup

Homemade Gravy Flour | 1/4 cup Salt & Pepper| to taste, Pan Juices | the pan juices from the meatballs Lemon Juice| ¼ cup Water | 1 cup

Directions

Meatballs Process all the ingredients, except the mince, in the food processor until smooth. Place this mixture into a large bowl with the mince and mix with your hands. Use a small ice cream scoop to evenly collect the same amounts and roll into balls in your hands. Place them on grease proof paper and cover with cling film. Let them set in the fridge for at least an hour before cooking.

Preheat the oven to 160 degrees.

In a heavy bottomed, shallow pan, put a tablespoon of coconut oil and roll the meatballs around in the oil before placing it in the oven. Cook the meatballs slowly, turning regularly.

Homemade Gravy

Once the meatballs are cooked, remove them and keep them warm, covered in foil. Leave the pan on the stove top to heat up. Add the flour and stir into the pan juices until it starts to turn brown. Then, slowly start adding the water, stirring all the time, until it thickens. Add salt and pepper and have a taste to see if it needs more seasoning. Stir in your lemon juice and taste it again. Is it thick enough? If it's too thick, add some more water. Likewise, if it's too thin, stir in some more flour. This whole process usually takes about 2 minutes. Then it's ready to pour onto your meatballs which you can serve with mash and beans.
