Hummus: how the falafel do you spell it?

Hummus, hommos, houmous???? Who really knows and does it matter anyway? Just as long as you can get some of this amazing, healthy, tasty stuff into yourself regularly, the correct spelling just is beside the point.
The versatility of this dish is endless and can be included in so many dishes in so many ways. On Pinterest there's whole boards dedicated to the humble chickpea paste! There's pumpkin, sun dried tomatoes, coriander and the list goes on and on.
This humble legume bestows a myriad of health benefits like lowering cholesterol, blood pressure, relieving constipation, diabetes and is very satisfying.
The above dip was made with some roasted beetroot and and a can of white beans in the food processor with lemon juice, garlic, tahini, salt and a little water to achieve the desired consistency. Too easy. Served with some cucumber sticks and sprinkles with sesame seeds, nigella seeds, cracked pepper and finely sliced lime leaves and olive oil, this dip is nutritious as well as a bit of eye candy. The deep pink is inviting.
