Bircher Muesli

I'm a recent convert to bircher muesli having been turned off commercially made cereals for decades now due to the high sugar content and lack of nutrition they provide. In fact, I really can't tolerate a sweet breakfast on a good day. But, once I discovered the versatility and simplicity of making your own bircher muesli, I was hooked.

How simple is it to juice a pink lady apple of two the night before and mix it with some organic rolled oats and cinnamon and leave it to soak overnight in the fridge. The next morning, I add homemade plain yoghurt ( Hansells and Easiyo have fabulous yoghurt making kits you can easily buy in most supermarkets), sultanas, honey, coconut and mix again. This can be eaten with some lovely fresh berries and nuts for your first meal of the day. Add a cup of freshly brewed coffee (I use a coffee dripper ground coffee beans) and you've got the perfect, sugar free, organic start to your day. I find this muesli quite satisfying and it takes me through to lunchtime, usually.

And this stuff gets better over the next few days as the flavours meld and soak into the oats. If it lasts that long.

Ingredients

Organic Rolled Oats | 2 cups Cinnamon | 1teaspoon Cranberries | ½ cup Apple Juice | Juice of 1 large Coconut | ¼ cup Yoghurt | 2 cups Honey | ¼ cup Nutmeg | 1 teaspoon

Directions

Mix all the ingredients together the night before for your breakfast in the morning. Place it, covered in the fridge, overnight.

When ready to eat, serve it topped with crushed nuts, strawberries and little extra honey to taste.
