Tahini and Almond Milk Soaked Oats with Quince Puree, Cashews and Berries. And Vegan! I'm getting better at the vegan options. It's made me search the supermarket shelves for new and different alternatives to animal based food. There's some yummy stuff out there. Enjoy!
This recipe is the perfect "non-cook" concoction! It's just a matter of opening, mixing and putting in the fridge overnight, ready for breakfast. So much better than any supermarket cereal which can only barely be described as food. By dropping all sorts of extras like chia seeds, tahini and maple syrup into this, you're improving your diet immeasurably. Benefits like balancing your blood sugar, lowering cholesterol and feeling fuller longer are just a few of the jewels in this bowl.

Ingredients
Rolled Oats | 2 Cups Almond Milk | 2 Cups Cinnamon | 1 tablespoon Tahini | ½ Cup Maple Syrup | ½ Cup Lemon Juice | Juice of half a lemon
Chia Seed | ¼ Cup Sultanas | ½ Cup Frozen Berries | ¼ Cup Cashews| ½ Cup
Directions
It’s almost too easy to mix all these ingredients, except the berries and the cashews, into a bowl, mix them and leave overnight in the fridge to transform into your breakfast the next day. Add any extra fruit and nuts you like. I always have organic frozen berries in my freezer and, on the day I shot these photos, had some quince puree. Serve it with some extra maple syrup or honey. Even Cacao chips would be lovely. Go for it!
