Pizza with Mozzarella and Parmesan Cheese and Coriander

Frozen pastry is a handy staple to have in the freezer. Smearing a sheet or two of pastry and topping it with cheeses and onions and mushrooms, bacon and even egg can produce the best lunch in just moments. Whack the oven on high and let the cheese bubble. It’s too hard to stop at just one.

Yield: 4 Serves • Prep Time: 5 minutes • Total Time: 15 minutes

Ingredients

Frozen Puff Pastry | 2 Sheets Pizza Sauce | 1/2 Cup Mozzarella | 4 pieces Red Onion | ½ Cup, finely sliced Bacon | ½ Cup, finely sliced Salt and Pepper | to taste Coriander | ¼ Cup Parmesan Cheese | ½ Cup Olive Oil | ¼ Cup

Directions

Preheat the oven to 200 degrees and place baking paper on a metal baking sheet. Slice the frozen pastry in 2 and coat with the pizza sauce. Spread the sliced onion, bacon, parmesan and mozzarella cheeses over the pastry and bake in the oven for 8 to 10 minutes until the cheese is melted and the pastry golden. Serve hot with fresh coriander and salt and pepper.
